- Slice and Dice the pork belly (depends on your liking).
- Slice garlic into thinner slices.
- Slice Shitake Mushrooms.
- Oil your pot/wok.
- Add Garlic and Ginger until fragrance.
- Add Diced pork belly and stir until partially cooked.
- Add Sliced Shitake Mushrooms and stir.
- Add Ground Pork and stir.
- Add Star Anise and Cinnamon sticks and shallots.
- Add Shaoxing Wine, Light Soy Sauce, Dark Sauce, Brown/normal sugar and stir.
- Add 400ml water and hard boiled egg.
- Cover and braise for 1hr - 1.5hrs. Do check in every 10-15mins to ensure water doesn't dry up. Add if necessary and give it a good mix again..
- Ready to serve after 1.5hrs. You can leave it longer for better flavour. Serve with rice :).
